Re: Plan review for Clifton Inn located at 1296 Clifton Inn Drive Charlottesville, VA
Dear Mr. and Mrs. Willey,
Our office has received a set of plans dated September 29, 2004. During a
meeting on September 27, 2004 with J.F. Legault, Director and Christian Kelly the
following were discussed:
1. All finish materials for walls, floors, and ceilings for tourist establishment rooms shall
be easily cleanable.
2. Your plans show a total of 7 tourist establishment rooms. Is this accurate? More
information may be needed.

3. The basement will not be used for any food preparation. However, your plans show
• a dishwashing.area that includes•a"dumb waiter:" More information is needed
regarding this set-up. .
4. Verify an accessible handsink is available to the staff in the washing area located in
the basement.
5. All finish materials for floors, walls, and ceilings in the basement and kitchen shall be
easily cleanable, smooth, and washable.
6. At least 20 foot candles are needed in the dishwashing area, 10 foot candles in all dry
storage areas, and 50 foot candles in the food preparation area. RECEIVED

7. The basement area shows several areas not labeled. Additional information is
needed. (Reference page A 1.0).
8. Adequate shelving units shall be provided for dry storage and proper air drying for all
equipment/utensils after cleaning and sanitizing.
9. Based on your menu,your kitchen plans do not appear to show adequate refrigeration
storage. More information is needed.
10. An additional handsink is needed in the food preparation area in your kitchen.
11. Elevation drawings are needed for items 1-6 in your food preparation area.
12. Your kitchen plans do not show an additional culinary sink. Therefore,your three-
compartment sink shall be plumbed with a proper air gap.
13. A mop rack is needed.
14. More information is necessary regarding the storage for cleaning supplies/chemicals.
15. Your plans do not show an exterior door. How will you receive deliveries?
16. You propose an ice machine. More information is needed regarding its location.
17. Additional information is needed for the wait station area.
18. A barrier is needed between the chefs table area and the entrance to the kitchen. In
addition, what will this area be used for?
19. A durhp sink is needed in the bar area. Furthermore, this sink shall be plumbed with
a proper air gap. .
20. All finish materials for floors,walls, and ceilings, in bar area shall be easily
cleanable.
21. Your bar plans show several shaded areas. More information is needed.
23. Elevation drawings are needed for bar area.
